  • 4 cm ginger, puree

  • 4 stalks of lemon grass, bruised the white part
  • 4 bay leaves
  • 3 pieces of lime leaves, torn
  • 2 teaspoons of coriander powder
  • 2 teaspoons of salt
  • 1 teaspoon of ground pepper
  • 1 teaspoon of brown sugar, finely grated
  • 1 teaspoon of seasoning (optional)
  • 200 ml of water

Ground spices:

  • 10 grains of shallots
  • 6 grains of garlic
  • 5 curly red chilies
  • 5 pieces of red bird's eye chilies (adjust according to the level of spiciness you want)

How to make:

  • Prepare pork that has been cut into pieces and cleaned well.
  • Mix pork with garlic, ginger, galangal, lemon grass, bay leaves, lime leaves, coriander powder, salt, pepper powder, brown sugar, and flavoring (if used) in a bowl.
  • Stir well until all the spices evenly stick to the meat.
  • Let the meat marinate for at least 2 hours, or preferably overnight in the refrigerator so that the flavors infuse properly.
  • Preheat the oven or grill to about 180-200 degrees Celsius.
